It’s always been a dream of mine to have a still. That might seem like a strange aspiration (or maybe an indication of a not-so-healthy habit) but the alchemist in me is fascinated by both the science and the art of making fine spirits. And, I’m discovering it’s flavoured with a healthy dose of hands-on farming.
Out On A Limb Craft Farm Distillery will be the result of a truly farm-to-bottle process. All the raw materials will be sourced from 100% BC farms, including our own field and two neighbouring farms that I’ve begun seeding with rye, triticale, oats, barley, soft white wheat and corn.
I’m loving the process of working the land. You really haven’t lived until you’ve driven a Massey-Ferguson tractor at a whopping five kilometers an hour through your neighbourhood. Some serious Old Macdonald moments happening here. E-i-e-i-oh-my-goodness. Yes, please, drive around me. I’m not going anywhere in a hurry.
Thanks to the native flora and my wife’s efforts the botanical flavourings – juniper, strawberries, basil, mint, lemons, lavender – will be the product of our own green thumbs. Our unique hand-crafted spirits – bourbon, gin and vodka to name a few – will be the result of great care and attention from the ground up.
